INGREDIENTS
BASE
2 cups rolled oats
2tosp maple syrup
1⁄2cup coconut oil, melted,
or MCT oil
1tsp vanilla extract pinch of sea salt
CARAMEL
11⁄2 cup dates, pitted 1⁄4cup boiling water
TOPPING
1 cup dark chocolate, chopped
METHOD
1. Begin preparing the caramel layer by soaking the dates in boiling water for 10 minutes.
2. Meanwhile, blend the rolled oats in a blender until smooth.
3. In a mixing bowl, combine the oats with the maple syrup, coconut oil, vanilla extract and sea salt.
4. Press the mixture into a lined loaf tin to create the base of the slice. Make sure you spread the mix evenly throughout the tin.
5. Once your dates are moist and sticky, drain the water and add them to a food processor or high-speed blender. Pulse/ blend the dates until you get a smooth consistency. If necessary, add some hot water to help them blend, but not too much water as you want the consistency of caramel. If your blender isn't great with dates, mash them with a fork.
6. Spread the caramel over the base and place in the freezer for 20 minutes to set.
7. Once set, remove the tray from the freezer and prepare your
chocolate topping.
8. Melt the chocolate in a microwave or over a bain-marie and pour over the slice, tilting the tray to ensure there is chocolate covering the whole slice. Place in the fridge for 30 minutes to allow the chocolate to set.
9. Cut the slice into squares and enjoy!
10. Store in the fridge in a container for 5-7 days.
JACQUI'S TIP
When melting the chocolate, be mindful not to burn it. I like to cut it into little pieces so it melts faster. Freezers can often be a little crowded, so when placing the bar in the freezer, try to keep it as flat as possible. I sometimes use a small Tupperware container to make this slice. A silicone cupcake tray also works with this recipe. If you are making this snack for friends and family, double the ingredients to make a bigger batch.
